When Food in Jars: Preserving in Small Batches Year Round was published, it contained a number of typos. Many have been corrected in more recent editions (printings seven and higher should be nearly typo-free), but if you have one of the first printings, you might encounter some questionable typos. Here are all the ones that I’ve found or that have been brought to my attention. If you discover one that is not on this list, please do let me know.
Apricot Jam on page 27: Recipe calls to peel apricots, which is incorrect. Apricots never need to be peeled. Additionally, instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular-mouth…”
Sour Cherry Jam on page 28: Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…”
Peach Jam on page 30: Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…”

Cantaloupe Jam on page 38: Recipe calls for 1 tablespoon freshly squeezed lemon juice, which is incorrect. This recipe calls 1 tablespoon bottled lemon juice, not fresh.

Pickled Green Tomatoes on page 142: Recipe lists 2 pounds of tomatoes twice; this should be ignored. Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…” Additionally, the first paragraph of instructions says “the process on page 000.” That information, with the correct page number, proceeds the fragment in the previous sentence.
Lemony Pickled Cauliflower on page 144: Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…”
Canned Orange and Grapefruit Segments on page 183: Page reference in recipe for supreming fruit should read, “see page 78.”
Gingery Canned Seckel Pears on page 186: Page reference in recipe for ginger juice is wrong and should read, “see page 31.”
Blueberries in Syrup on page 193: There is an extra period after the first sentence in the recipe instructions.

I came looking for clarification about the cocoa in Shay’s chocolate cake p. 215. The recipe calls for black cocoa powder not dutch process but black cocoa is actually heavily dutched to make it black. I know Dutch and natural cocoa are not always interchangeable hence my question. Love the book btw!
Does the pickled asparagus recipe yield 3 one-pint jars or 4 one-pint jars? Below the intro, it reads, “Makes 3 one-pint jars,” but the first line of the instructions explains that 4 one-pint jars should be prepared. Is the ingredient list correct then?
That is just one of the yield typos in the early addition of the book. The yield below the intro is the correct one, that recipe should make 3 pint jars.
Do you have a book on canning? If so, how can I purchase a copy? Thanks for your help. After many years of canning I purchased the FreshTech canner a year ago and love it as I am 72 years old and like the idea of not making huge batches of jam. I made over 30 jars of the jalapeño jelly for holiday gifts this year. They were a big hit.
Hello! I am about to order your book from amazon. I cannot find anything that says what edition I will be getting. It says published in 2012, and the copyright in the front (on the “Look inside” view) says 2011. Is this a later edition that has less typos?
Looking at the “Look inside” view, the apricot jam still calls for peeled apricots, but above you said this was a typo. This is what makes me curious of what edition I would be getting.

Andrea, there’s just the one edition of the book, but there have now been either 8 or 9 printings. All copies have the same copyright information of 2011 (though it didn’t officially come out until 2012). They don’t update the “Look Inside” so that’s not a good guide. The typos are corrected in the more recent printings, which should be the only ones currently in circulation. Chances are very good that if you order from Amazon, you’ll get a typo-free version.
